(Homebrew thread) - [fr31ns]Karrde - 02-16-2013 Palmer is indeed correct (I have his book too). Lagers yeah you prolly wanna do a starter. For my high grav stuff I usually do a double pitch. But a starter would probably yield more consistent results. I just mean in most cases the difference is small, especially when you're just getting started and just want to make a correct batch. (Homebrew thread) - Didzo - 02-21-2013 My apartmentmate, while wandering around a supermarket, came across a Mr. Beer home brewing kit on sale for $15 that will yield 2 gallons of hypothetically drinkable Classic American Light in as little as 14 days. Logically, we purchased the kit and followed the instructions provided using what I can only presume are the highest quality products available. Keeping with the spirit of the endeavor, we disregarded the provided instructional DVD and did not look to the internet for guidance. This doubtlessly legendary beverage is now in the process of being fermented. Will post with results. Re: What'cha brewin'? (Homebrew thread) - Evil Cheese - 02-24-2013 Racked my bock yesterday to secondary for lagering. I tasted the gravity sample I took and it's coming along nicely so far. It has a nice complex toasty malt flavor at the front with good body, but as expected it finishes too busy for a lager. A nice hint of citric spiciness and earthiness from the Hallertau hops as well. It would actually make a decent ale if I bottled as is, but it still lacks the crisp clean finish of a good lager. -Edit: Now with Photo- Re: What'cha brewin'? Carbonation is just a question of having enough sugars and active yeast.  Usually if you're going to bottle it you boil water, add like 4-5 oz corn sugar/5 gallons, boil for 5 min to kill off any contaminants, cool a bit, put it into the bottling vessel and rack the beer on top of it.  The racking mixes it up quite well.  Then bottle it and hold it at the right temp for the type of yeast used for several weeks.  I've never had an issue with my beers carbonating.  Then serve at the correct temp for the style.  If you're kegging, a lot of people tend to filter and CO2 inject. (Homebrew thread) - Evil Cheese - 03-04-2013 I brewed a dunkelweizen this weekend since my 6.5 gal carboy was free again. For some reason I seem drawn to styles that are harder to find commercially where I live. The liquid yeast was a little old and I may have made it a little more bitter than what is normal for the style (usually around 10-15 IBU while I think mine will be more like 20 IBU), but I think it will work out. -Edit- Yeast is just fine. (Homebrew thread) - [fr31ns]Karrde - 03-05-2013 Looks good cheese, but get that thing out of the light. Visible light degrades some of the components of hops (and UV is even worse). Not as big an issue for a Dunkelweizen but... Also, just dry hopped the black ale. I think it's going to finish a touch too sweet due to incomplete fermentation. I think I tried pushing this yeast too hard in terms of ABV and I'm betting it got killed off. I might try a finish of champagne yeast in secondary next time to drive it further. But so far the flavor profile is really nice. Really oaky and I can taste the bitter profile coming out. Hopefully the dry hop will give it some of the zest back.
